Chocolate brownie recipe

Enjoy these scrumptious chocolate brownies which include all three, white, milk and dark chocolate. They really are the perfect treat for the chocolate addicts among us and a nice easy recipe to follow.

Ingredients:

  • 190g unsalted butter
  • 280g caster sugar
  • 80g plain flour
  • 45g cocoa powder
  • 3 eggs
  • 190g dark chocolate
  • 80g white chocolate
  • 80g milk chocolate

Method:

  1. Chop the unsalted butter and dark chocolate into a bowl, cover loosely with cling film and melt in the microwave. Put on high for 1 minute at a time, it should take around 2 minutes. Leave to cool.
  2. Chop the 80grams of white and milk chocolate and set to one side.
  3. Crack the 3 eggs into the bowl and add the caster sugar. Mix with an electric mixer until fluffy and pale. The mixture should double in size. This will take around 3-5 minutes. 
  4. Preheat the oven to 180C/160C Fan.
  5. Add the egg and sugar mixture to the melted butter and chocolate mixture two spatulas full at a time and fold. Do not stir the mixture as this will cause the air to be knocked out of the eggs. Patiently keep adding and folding the mixture until it is fully smooth and combined. 
  6. Sieve in the flour and the cocoa powder and continue to fold into the mixture. 
  7. Finally add the milk and white chocolate and stir into the mixture until the chocolate is distributed evenly.
  8. Pour the mixture into a square tin lined with grease proof paper. Roughly around 20cm square. Make the sure the mixture is levelled evenly. 
  9. Put in the oven and leave to bake for 25-35 minutes. 
  10. Once baked the brownies will have a hard layer on top, if the mixture wobbles in the middle the brownies are not fully baked and will need returning to the oven. 
  11. Once ready leave to one side and only remove from the tin once fully cooled. Peel the grease proof paper from the sides, cut into equal pieces and serve.
